Vegan Rocky Road Bites

This is a nutty & fruity vegan rocky road. Make a big batch & store it in the freezer for your sweet fix later or it’s a great batch to make for a birthday or social occasion. I’m not vegan myself, but I love a tasty dairy free option!

Time: 20 minutes

Quantity: 15 slices/ bites

Ingredients:

  • 250g 70% dark chocolate, roughly chopped

  •   3 Tbsp coconut oil

  •   1/3 cup almond butter

  •   1 ¼ cup of a can of full- fat coconut milk

  • 2 Tbsp maple syrup

  • ½ tsp vanilla extract

  • 1 cup roasted almonds, roughly chopped.

  •   ½ cup whole roasted pistachios.

  • 1 cup of dried cranberries

  • 1 ½ cups of puffed Quinoa (use any puffed cereal, such as rice of wheat)

Toppings:

•       ¾ cups of freeze-dried raspberries, lightly crushed.

•      ½ cup coconut chips

Method: 

  1. Line a medium slice tin (30x 23cm) with baking paper and set aside.

  2.   Prep chocolate and place in a large heat proof bowl with coconut oil and almond butter and set aside.

  3. Combine coconut milk, maple syrup and vanilla extract in a medium sauce pan on medium heat. Bring to simmer.

  4. Once simmering, remove pan from heat and pour this mixture over the melted chocolate & oil mixture. Let sit for 2 minutes, before whisking until smooth and all the chocolate has melted. 

  5. Add roasted almonds, pistachios, dried cranberries, puffed cereal to the bowl and toss to coat evenly in chocolate mixture. Spoon mixture into tin and spread out evenly.

  6. Sprinkle over coconut chips, and freeze dried raspberries on top. (or any topping of choice!)
