Peanut Butter Granola
Let’s just say I’m a nut butter fan – it features often! So why not bake it into your granola. Who doesn’t like a bit of nut butter crunch? Choose a good quality peanut butter with minimal ingredient’s like salt.
Time: 30 minutes
Quantity: Serves 5 cups
Ingredients:
• 2 cups of rolled oats
• 1 cup of coconut threads/ flakes
• ½ cup sliced or chopped almonds
• ½ cup of pecans chopped
• ½ cup pumpkin seeds
• ¼ cup sunflower seeds
• ¼ cup linseeds
• 2 Tbsp sesame seeds
• ¼ cup peanut butter (Use crunchy/smooth)
• ½ teaspoon cinnamon
• ¼ cup honey (warmed until pourable)
• ¼ cup sultanas/ raisins or chopped dates
Method:
1. Preheat oven to 180c.
2. Combine all dry ingredients in a large bowl ,except cinnamon
3. In a separate bowl, mix peanut butter, pourable honey, and cinnamon. Then spoon the peanut mixture over the dry oat mixture and distribute evenly (I use my hands).
4. Spread the mixture evenly over a large baking tray and bake for 15-20 mins until the mixture starts to brown & toast. Let it cool & crisp before dispensing into a jar/ container.
5. Serve with milk or yogurt & fruit.
Hot tip: It will last for weeks in an air tight container in a cool dry place.
